Green Curry Chicken with Eggplant

  • 100g or 1/3 cup AYAM ™ Thai Green Curry Paste
  • 500g boneless chicken, cut into approximately 2cm cubes
  • 200ml of AYAM ™ coconut milk
  • 125ml or 1 cup of water
  • 100g eggplants, chopped into pieces of about 2cm
  • 1 carrot (optional)
  • 2 kaffir lime leaves, minced
  • Basil leaves


  1. Heat a wok or saucepan over medium-high heat.
  2. Add the curry paste and the chicken, sauté for 2-3 min.
  3. Stir in the coconut cream, water and bring to a boil.
  4. Add the eggplant, carrots and kaffir lime leaves, reduce the heat and simmer for 8 to 10 minutes, until the chicken, carrots and eggplant are cooked.
  5. Decorate with basil leaves. Serve with steamed rice.
