
Coconut Chocolate French Toast

Ingredients:
For the French Toasts:
- 2 thick slices of stale brioche
- 23cl of AYAM ™ light coconut milk
- 1 big egg
- 1 tablespoon brown sugar
For the coconut chocolate coulis:
- 10cl of AYAM ™ light coconut milk
- 80g chocolate eggs or chocolate bar
Toppings:
- 1 banana
- 100g frozen raspberries
- 1 lime zest
Preparation:
- Cut the bananas and thaw the raspberries.
- Prepare the French toast mixture: in a bowl, whisk the coconut milk with the sugar and the whole egg.
- Soak the brioche slices in this mixture.
- Heat a pan with a knob of butter. As soon as the butter becomes foamy, brown the brioche brioche slices on both sides. Add a little sugar if desired to obtain a caramelized brioche.
- In the meantime, melt the chocolate with the coconut milk to obtain a smooth and homogeneous texture.
- Place the brioche slices on plates, add a few slices of banana, the raspberries and drizzle with the chocolate coulis.
- Finish by zesting the lime on top. Enjoy!
Chef's Tips:
To spice up this dessert a little, you can add a hint of ginger or cinnamon.
Vary the fruits according to the seasons and according to your tastes.
