Coconut ice cream
Ingredients:
- 1 cup chopped coconut meat
- ½ cup AYAM ™ coconut milk
- ¾ cup of AYAM ™ coconut water
- 1 cup heavy whipping cream
- ¼ cup condensed milk
- ½ cup of coconut powder
- A few black beans (optional)
Preparation:
- Combine the chopped coconut meat, coconut milk and coconut water to obtain a smooth paste.
- Refrigerate for 20 minutes before whipping the cream.
- In a large bowl, add the heavy cream and beat until stiff peaks form.
- Add the prepared coconut paste to the whipped cream. Mix.
- Add the condensed milk and mix until well combined.
- Add the rest of the coconut powder.
- Freeze ice cream until set, about 6 to 8 hours.
- When ready, add a few black beans on top of the ice cream and serve.
