Instant Noodles and Sautéed Beef with Red Curry
Ingredients:
- 2 tablespoons of vegetable oil
- 600g beef, minced
- 4 kaffir lemon leaves, finely chopped
- 1 ½ tablespoons finely chopped lemongrass
- 1 tablespoon grated ginger
- 3 garlic cloves, crushed
- 1 red onion, cut into thin wedges
- 2 tablespoons of AYAM ™ Thai Red Curry Paste
- 270ml of AYAM ™ Lightened Coconut Cream
- 60ml of lemon juice
- 4 portions of AYAM ™ Instant Noodles
Preparation:
- Heat half the oil in a pan, sauté the beef over high heat until golden brown, set aside.
- In a wok heat the remaining oil, add the kaffir leaves, lemongrass, ginger, garlic and onion. Sauté over high heat for 1 minute Add the beef with the curry paste, coconut cream and lemon juice.
Stir until the whole is hot. - Meanwhile, prepare the noodles according to package directions. Divide the noodles between bowls.
- Add the beef and vegetables on top.
