Pannacotta Coconut Pomegranate
Ingredients:
- 200ml of AYAM ™ coconut milk
- 200ml of AYAM ™ coconut cream
- ½ teaspoon of vanilla extract
- 60g sugar
- 50g palm sugar
- 1 tablespoon of gelatin powder
- 2 tablespoons of cold water
- 1 tablespoon of pomegranate
- Mint leaves for garnish
Preparation:
- Combine the AYAM ™ coconut milk and cream, the sugar and the vanilla extract, then heat everything. Stir occasionally until the sugar is well combined.
- In a bowl, add cold water and gelatin powder. Stir for 10 seconds.
- Add gelatin to hot mixture and stir until powder dissolves.
- Pour the preparation into a ramekin and let stand in the refrigerator for about 2 hours.
- In a saucepan, heat the palm sugar with 40ml of water. Mix until you get a syrup.
- Before serving, sprinkle the pannacotta with pomegranate seeds, palm sugar syrup and arrange a few mint leaves
