
Japanese Pearls in Coconut Milk

Ingredients:
- 660mL of AYAM ™ coconut milk
- 260 mL whole milk
- 80g of tapioca
- 80g of brown sugar
- 1 mango
- 2 passion fruit
- 2 tablespoons of liquid vanilla
- 6 teaspoons of grated coconut
- 6 teaspoons of chia seeds
Preparation:
- In a large saucepan, pour the coconut milk, whole milk and Japanese pearls (Tapioca). Mix then let stand 30 minutes.
- Once the mixture has rested, heat the saucepan over medium heat, adding the brown sugar and liquid vanilla. Heat until boiling and mix regularly.
- When it comes to a boil, reduce the heat to low heat and cook for 10-15 minutes without stopping stirring. The mixture should thicken as it goes. The tapioca pearls should become translucent, this means they are cooked.
- Remove the preparation from the heat and pour it into verrines. Place the verrines in the refrigerator for at least 2 hours.
- To assemble, take the verrines out of the refrigerator after 2 hours.
- Cut a mango into cubes. Remove the pulp from the passion fruit.
- Place the diced mango and passion fruit in the verrines. Then sprinkle with grated coconut and chia seeds.
- To be enjoyed chilled!
