Spring Rolls with Chicken and Avocado
Ingredients:
- 250g minced roast chicken
- 1 chopped avocado
- 200g alfalfa (alfalfa sprouts)
- 2 teaspoons of grated ginger
- 2 stems of coriander, roughly chopped
- 1 teaspoon of AYAM ™ sesame oil
- 1 tablespoon of Nuoc Mam AYAM ™ sauce
- 1 lime for the zest
- 1 tablespoon of lime juice
- 12 rice sheets
- 3 tablespoons of AYAM ™ Garlic and Ginger Chili Sauce
Preparation:
- Combine chicken, avocado, alfalfa, ginger, cilantro, sesame oil, Nuoc Mam sauce, lime zest and juice.
- Soak a rice paper in lukewarm water to soften it. Gently place on a clean towel. Place two tablespoons of the mixture lengthwise in the middle of the sheet. Fold the sheet from the bottom up over the mixture. Fold both sides inside and roll from bottom to top, pressing down on the sides. Repeat the operation to complete the mixture.
- Serve with the garlic and ginger pepper sauce.
