Noodle and Shrimp Salad with Coconut Sauce
Ingredients:
- 200g AYAM ™ rice noodles
- 600g shelled and cooked medium shrimp
- 1 small mango
- 1 Cucumber
- 8 radish
- 2 green onions
- 100g snow peas
- 30g chopped mint
For the sauce:
- 140ml of AYAM ™ coconut milk
- 1 ½ tablespoons of AYAM ™ Thai sweet pepper sauce
- 1 ½ tablespoons Nuoc Nam AYAM ™ sauce
- 1 teaspoon of grated ginger
- 80ml of lemon juice
Preparation:
- Prepare noodles according to package directions, drain and rinse under cold water.
- Peel, seed and cut the mango. Cut the cucumber, radishes and onions into thin slices.
- Combine noodles, shrimp, mango, cucumber, radishes, onions, snow peas and mint in a large bowl.
- Add the coconut sauce and mix.
- For the coconut sauce: mix all the ingredients in a bowl, whisk until you get a smooth consistency.
- Serve the noodle salad with the sauce.
