Pumpkin Soup with Organic Coconut Milk
Ingredients:
- 2L water
- 1 onion, thinly sliced
- 500g of pumpkin
- 30g of butter
- 1 cube of vegetable broth
- 10g minced ginger
- A few kaffir lemon leaves
- Basil
- 400ml of organic AYAM ™ coconut milk
- Salt and pepper
Preparation:
- In a saucepan, bring the water to a boil and add the vegetable bouillon cube.
- Add the pumpkin and cook for 20 minutes. Once cooked, remove the pumpkin from the broth and set aside. Keep the broth.
- In a wok over medium heat, add the butter and onion. Sauté the onion for a few minutes then add the pumpkin and mix.
- Add the coconut milk and broth. Cook over medium heat for 10min.
- Add the ginger, salt and pepper. Mix and simmer for 1 minute.
- Sprinkle with basil and kaffir leaves.
