Shrimp Toasts

Ingredients:

500g raw prawns / prawns (about 250g when peeled)

1 clove of garlic

2cm of fresh ginger

1 new onion or cebette

1 tablespoon of Ayam ™ sesame oil

1 tablespoon of Ayam ™ soy sauce
-
1 tablespoon of Ayam ™ nuoc mam sauce
-
1 level tablespoon of cornstarch (or flour)

8-10 slices of quality sandwich bread
-
50-60g of two-colored sesame seeds
-
Neutral oil (rapeseed, sunflower, etc.)

Sauce to accompany: Thai sweet pepper sauce or Ayam ™ sweet and salty pepper sauce
Preparation:

Mix the prawns, the garlic, the ginger that you have peeled and grated, the new onion, the oil, the soy sauce, nuoc mam and the cornstarch. You need to get a really mushy, lump-free texture!

Then cut the crust of the slices of sandwich bread then spread the preparation on top, repeat until the dough is exhausted. Dip the side on which there is the dough in the sesame seeds that you will have arranged on a flat plate. Finally, cut each slice into quarters before cooking them. Note: you can keep the bread crusts and mix them once they have hardened: this will give you breadcrumbs for another recipe!

Heat a pan or plancha over medium-high heat. Once hot, add a drizzle of neutral oil. Cook the bites for a few seconds on each side, until toasted.

Serve with the Ayam ™ sauce of your choice and enjoy as an aperitif!
